Overnight Chia Seed Pudding Recipe

Chia seeds are one of the healthiest foods available to us on this planet. Did you know that the ancient Aztecs, Incas and Mayans often used chia seeds for energy and medicinal properties. This is not too surprising considering that this magical seed is packed with protein, calcium, soluble fiber, omega-3 and omega-6 fatty acids, potassium and antioxidants. That’s a pretty impressive lineup if you ask me!

Here at SOVI FIT we LOVE chia seeds because they are easy to find and can add nutrition and substance to almost any dish without all the extra calories. Here is one of our favorite customizable chia seed recipes…

Chia Seed Pudding Recipe

Ingredients:
4 tablespoons of chia seeds
1 cup unsweetened coconut milk (any dairy free milk will do)
1/2 teaspoon of vanilla extract
1 dropper full of stevia (optional)

Mix the liquid ingredients together and then add in the chia seeds. Stir the mixture well with a fork. Place in the fridge overnight and enjoy the next day with your favorite fruit, granola or nuts! Enjoy!
