This vegan quinoa breakfast bowl is incredibly simple, requiring just 6 ingredients, 20 minutes, and 1 pot to prepare.
1 cup quinoa
1-2 tablespoons of Coconut Oil
2-3 tablespoons of Maple Syrup
1/2 teaspoon of Vanilla Extract
Fresh Fruit (I use kiwi, strawberries, papaya)
In a small saucepan, cover the quinoa with the water and bring to a boil. Add in coconut oil, maple syrup and vanilla extract. Cover and cook over low heat until the water has been absorbed and the quinoa is tender, about 15 minutes. Garnish with your favorite fresh fruit and almonds. Enjoy!
