After sharing his journey with me I knew that it was extremely important for others to hear his story. Samantha: What kind of health issues were you experiencing before you changed your diet?

German: The thing that opened my eyes about my health and mortality was when I had to have two stints put on the arteries of my heart and two balloon angioplasty to two other arteries. The two arteries with stints were 98% blocked and the other two were at 50% and 60% respectively. I could have died of a heart attack at any given time. I had high blood pressure, high cholesterol, high triglycerides and was about 40 lbs over weight. I was taking a total of 8 medications to basically keep me alive. I needed the medication to control my blood pressure, cholesterol, triglycerides as well as medicine to prevent diabetes. Not to mention the side effects such as edema, insomnia, dizziness, body aches, diarrhea and erectile dysfunction.

Samantha: Wow, that sounds like a pretty horrible way to live. What made you decide to ditch animal products and switch over to a plant based diet?

German: After the stints and angioplasty, I made the decision to change my eating habits. I started eating more vegetables, chose fish over beef, consumed less food, drank more water, cut out alcohol and exercised more (walking). I like to be alive, so in a matter of a month I lost some weight and gained stamina. However, once I watched the documentary “Forks Over Knives” I became aware of the studies and did more research. After reading the actual studies done by the two doctors I decided to give a plant based diet a try. I was looking for more validation of what I wanted to do. I changed my diet to plant based and cut out all processed foods. My diet is made of fruits, vegetables, legumes, oat meal and various spices.

Samantha: I’m so impressed! How long before you started to see results? Has your health status changed?

German: We are what we eat… and it did not take very long to start seeing results. At the end of one month I could sleep better, had more energy and my clothes fit better. After four months, my blood pressure is a bit below 120/80 without medications. I lost 25 lbs and my my blood pressure, cholesterol and blood sugar is normal. I’m taking half the medication I was taking and my doctor said that by the end of the year I may be free of medications. I expect to loose another 10 to 15 lbs by the end of the summer. This was accomplished in about 4 months of eating nothing but plant based foods.

Samantha: German!! That is AMAZING. You should be so proud of yourself. Has it been hard? Do you miss consuming animal products?

German: I’m a results oriented guy. Seeing the results I have had so far makes it hard to go back. I miss fish but, by eliminating animal cholesterol, my cholesterol is the best its ever been. My focus had caused me not to dwell on my cravings but on my health. Most of my peers look older and they do not feel as good as I do. I think most of society looks for instant gratification without doing anything about. I’m enjoying what I’m doing. No regrets.

Samantha: I love your focus and dedication to a healthy lifestyle. What advice would you give to someone who is considering making the switch to a plant based diet?

German: Our bodies heal themselves given the appropriate nutrition. There are no magic pills that will change your life as much as knowing what fuels you are putting in your body. Changing your eating habits will improve the way you feel and the way you look without the side effects. Improvements in anyone’s health can be realized in a short period of time. Give it a try and see for yourself. I’m not trying to convert anyone to be a vegan but I personally have had experienced outstanding results with my health.

Samantha: I couldn’t agree with you more! What kinds of foods do you eat? Whats your favorite plant based meal?

German: I hydrate with coconut water. I eat my veggies raw, grilled, in soups or in salads. I like bell peppers of all colors, mushrooms, avocados, tomatoes, cucumbers, egg plant, kale, beets, squash, zucchinis, sweet potatoes, carrots, brussels sprouts, cabbage, and all kinds of leafy greens. I love oats! I have oat meal almost every day for breakfast with blueberries or other fruits. I include all kinds of fruits on my diet such as oranges, bananas, mangos, papaya, blue berries, strawberries, blackberries, raspberries and many more. Other foods I eat regularly are lentils, red beans, white beans, black beans and garbanzos. I use lemons, limes, low salt and various spices such as pepper and cumin. I have two favorite meals: a cucumber, tomato and avocado salad on a bed of lettuce AND a soup made with kale, diced tomatoes, cannellini beans and carrots.

    Go figure. When I first became a vegetarian, I put on a LOT of weight. I’ve since given it up after a CBC showed high cholesterol and anemia, but I still have a bad high GI carb habit.
